Breakfast Mugs Meals for On-the-Go College Students

Being a college student means a lot of studying, little sleep, and always having to grab a quick bite to eat. Sometimes if you are feeling too tired or busy, you will substitute a snack food for a meal, but breakfast is one of the most important meals a day, and even as college students you tend to skip it. Sure, you have plenty of excuses: maybe you are in a rush to class, or did not allow yourself enough time to get ready for your volunteer hours or internship. There is an easy way to accomplish all you have to do, while still getting the fuel you need to seize the day: breakfast mug meals.

Microwavable meals are beneficial when you’re on the go because they save you time and the hassle of having to clean up. This is a convenient way for you to make a quick, tasty meal, while using only a few ingredients and of course, a mug and a microwave. Check out uCribs’ favorite recipes below!

Peanut Butter and Jelly

Everyone loves peanut butter and jelly. Whether you are eating it for breakfast, or to snack on, it’s one of those staples that reminds you of when your mom used to make the perfect little PB&J. This Peanut Butter and Jelly Breakfast Mug is a new take on the staple that may want to make you shout: “It’s peanut butter jelly time!”

Ingredients:

2 tablespoons butter

1 tablespoon peanut butter

1 tablespoon milk

4 tablespoons all-purpose flour

1/2 teaspoon baking powder

1 tablespoon jam of your choice

Directions:

  1. Place butter into a microwavable mug and heat until it is melted.
  2. Add in the remaining Ingredients: and mix well with a fork until everything is combined.
  3. Once the batter is mixed, place the jam into the batter.
  4. Microwave for 45 seconds to a minute, or until firm on top.

 

French Toast

Do you want French toast, but you don’t have the time to devote to the arduous process of making it? By whipping up some French toast in a mug you can still get the flavor profile you’re craving—all while saving a ton of time.

Ingredients:

1 teaspoon butter

3 tablespoons whole milk

1 teaspoon maple syrup or syrup of your choice

1/4 teaspoon cinnamon

1/4 teaspoon vanilla extract

Pinch of ground nutmeg

1 large egg

1 cup hearty bread pieces cut into ½-inch pieces

Optional Toppings: berries, bananas, nuts, powdered sugar

Directions:

  1. Place the butter in a large mug and microwave for 15 to 20 seconds, or until melted. Add the milk, syrup, cinnamon, vanilla, nutmeg and egg to the mug, then whisk until everything is well mixed.
  2. Add the bread pieces to the mug and gently stir until all the pieces are saturated with the egg and milk mixture. Let the bread sit and absorb the liquid for about 1 minute.
  3. Microwave the mug for 60 to 90 seconds, or until the mixture is solid.
  4. Serve immediately.

 

Cinnamon Sugar Donut Mug Cake

Who doesn’t love donuts? Um… yeah, that’s what I thought. But donuts cost money…and time spent waiting in your local donut shop, bakery, or café. If you have a Homer Simpson-sized craving for your favorite treat, there’s still a way to satisfy your hankering—just make your own by using this microwavable mug recipe! It allows you to start your day with just the right amount of sugar—just make sure you have your Red Bull ready for a slight crash at noon.

Ingredients:

4 tablespoons flour

1/2 teaspoon baking powder

3 tablespoons sugar

1/2 tablespoon butter, softened

4 tablespoons milk

1/2 teaspoon vanilla extract

1/8 teaspoon nutmeg

Pinch of salt

Cinnamon sugar

Directions:

  1. Mix all the ingredients in a bowl.
  2. Pour into greased mug that is at least 16 ounces.
  3. Microwave on high for 60 to 90 seconds.
  4. Slide a knife around the sides of the cake inside the mug.
  5. Sprinkle generously with cinnamon sugar… and we mean, generously.

 

Omelet

Do you feel like enjoying an omelet for breakfast? Most do, of course, but it really is one of the more complicated breakfast dishes: you have to have the right skillet, spatula, and of course, the necessary flips. Save yourself the heartache of ruining your perfect omelet with an Omelet Breakfast Mug. It’s eggsactly what every egg lover needs in their life.

Ingredients:

Cooking oil spray or olive oil

1 tablespoon milk

1 tablespoon grated cheddar cheese

1 tablespoon finely chopped red bell pepper

1 teaspoon finely chopped chives or green onion

Pinch of salt

Pinch of black pepper

Directions:

  1. Spray the inside of a large, microwave-safe mug lightly with cooking oil spray, or coat the inside of the mug with olive oil.
  2. Crack two eggs into the mug then add milk, and beat with a fork.
  3. Add grated cheese, chopped red bell pepper or chives, and salt and pepper. Stir with a fork until well mixed.
  4. Microwave and stir in 20 to 30 second increments.
  5. Return to the microwave and cook for another 20 to 30 seconds.
  6. When you see patches of firm cooked egg mixture beginning to form, remove and stir again.
  7. Return to the microwave and cook for another 20 to 30 seconds, or until the omelet has set.

 

Pancake

Pancakes are one of the most popular breakfast recipes, and how can they not be, when it’s literally like eating cake or breakfast? Like French toast, it can be messy and a lengthy process. Skip your typical iHOP alternative, and check out this Pancake Breakfast Mug. It’s so good that it may even make you consider your innate love for waffles.

Ingredients:

1/4 cup Bisquick

1/8 cup milk

Directions:

  1. In a microwave safe mug, whisk Bisquick and milk with a small whisk for a few seconds.
  2. Heat in the microwave for about one minute.
  3. Let the pancake cool slightly before removing from mug and serve with syrup.
